United Way of Snohomish County: Hunger ChallengeCould you eat for
just $7 a day?

That’s the maximum
amount a participant in the Washington Basic Food Program has to spend on a day’s meals. United Way of Snohomish County invites you to join in its first Hunger Challenge Nov. 1-7 and walk for a week in the shoes of someone on food stamps.

This act of advocacy is really a challenge to learn how you
can help advance the common good while battling for basic needs in
our community. You can also choose to do the challenge with your
partner or family. The rules are simple:

  • You should eat breakfast, lunch and dinner, spending only
    $7 per person, per day on food.
  • Salt and pepper don't count as expenditures, but all other seasonings, cooking oils, condiments, snacks, drinks, etc. do.
  • Don't use food you already own.
  • Don't accept food from family, friends, coworkers or others in
    the community. That includes free samples at your local
    grocery store!
  • Try to include fresh produce and healthy protein each day.

We ask that you keep track of expenses, food choices, etc. and share
your experiences and insights on our blog.

GREEN PEA PESTO WITH PASTA

56¢ per serving

1 c. penne pasta 24¢
1 c. frozen organic peas, 75¢
2 cloves garlic, 5¢
2 TB extra virgin olive oil, 36¢
2 TB parmesan cheese, 42¢
(Recipe makes 5 servings
of sauce.)

Roughly chop the garlic. In a small saucepan combine the garlic and green peas with just enough water to cover. Bring to a boil over medium heat then lower the heat to simmer and cover the pan. Cook for 3 minutes or until peas are cooked through and garlic is no longer raw. Drain the peas, reserving the water. Place the peas and olive oil in the blender and blend, adding just enough water to make a smooth paste, about 1 tablespoon. Combine mixture with parmesan cheese. Serve 2 tablespoons of sauce over each serving of
penne pasta.
